Late Lunch

So I've got a late start on lunch yesterday and my son was wondering what was going on.  He even said thank you mommie.... food.... when I was putting his plate together.  Well because I was shooting for a quick meal I had to use Gardein " garden protein" great product.  I made buffalo style wings  using Frank's Red Hot Original Hot sauce and for my little one I made them BBQ style.  I only use these meat substitutes when I'm short on time, which is what make them a treat for me at least. 

Buffalo "Chickin" Green Salad with vegan ranch dressing, and a clean version of Dirty Rice





***Just FYI the vegan ranch dressing was delish.....I made it from raw macadamia, raw cashews, dried chives, parsley, and dill, and toss in with a little celery and water.  Blended them all together and there you have it creamy vegan ranch dressing.

Mmmm.... Cornbread

I made this cornbread with the black eye peas and collards in a previous post.  But I just wanted to show off my cast iron skillet, I used it to bake the cornbread.

No disrespect to Jiffy but that stuff wouldn't be sold if people realize they can make thier own cornbread easily.  What best is that this recipe combines both whole cornmeal and I used King Arthur's Flours cause that my favorite and of course free of dairy and eggs.



Meal Journal - SB week

As you will soon find out I'm a cookbook collector.  I'm also a neat freak and plan out my meals for the week when I have time, because this help me save time as well as save money.  Well this particular week it was Skinny B week this cookbook was written by Rory Freedman and Kim Barnouin.  And I love so many of the recipes from this book it's shameful how I eat them up.  But I'm ok with that. 



Calzones....made from fresh dough and veggies, it a very fun recipe and make you feel like you're in a pizzaria as a chef.


Meal Journal

I find myself snapping photos of what I bake or cook.  These photos normally remain on my blackberry for a while and I revisit them when I'm scrolling through my pics.  Occasionally I send the photos to my husband who is always traveling and it only makes him home sick.  So I decided that I will create a meal journal of what I have cooked.  Below are a couple
